Around 6 a.m. Korea time, the hand records stop at three high-limit tables in the live baccarat lobby. An hour later, two Japanese dealer tables follow.
Those five do not deal again until the afternoon. The other 88 tables run all day. We used real recorded hands to lay out a day of baccarat site tables in Korea time (UTC+9).
Open table: in this post, a table with at least one hand recorded in that hour.
The Evolution baccarat lobby our collector watches has had 93 tables since 17 September. Before that it had 96. 59 have Speed in their name, and 34 do not.
How the tables split by name and commission is in baccarat site game types. This post looks only at when those tables run.
Hourly averages come from 16 days of hand records, 6 to 22 October, about 3.8 million hands. 14 October, when collection broke off, is left out.

Five tables close every day: three high-limit VIP tables (two of them speed tables) and two Japanese dealer tables.
From 25 September to 28 October, these five closed at about the same time every single day. Only 1 October, when collection stopped entirely, could not be checked.
Until 24 October, the three high-limit tables dealt their last hand around 4:55 to 5:00 a.m. They opened again between 1:00 and 1:25 p.m. That is about eight hours off.
From 26 October the schedule moved an hour later. The last hand came at 5:47 to 5:58 a.m. and the first at 2:04 to 2:24 p.m.
25 October, the day the schedule changed, is the day European summer time ended. Article 3 of EU Directive 2000/84/EC says summer time ends at 1:00 a.m. GMT on the last Sunday in October (EU summer-time directive).
If these tables close and open at the same hour on a European clock, the one-hour shift fits (an estimate). On 25 October itself they closed at 4:58 a.m. and opened at 2:05 p.m., so that one day they were off for nine hours.
The two Japanese dealer tables behaved differently. They closed around 7 a.m., opened at 3:03 to 3:19 p.m., and kept the same times on both sides of 25 October.
On the current schedule, a Korea-time day splits like this.

On a bar chart the gap is small: 93 at night, 88 in the daytime.
Even in the quietest daytime hours, 88 tables are open. The table count drops for roughly nine hours a day, and 57 speed tables keep running through it.
Total hands have the same shape. Over the same 16 days, the busiest hour was 01:00 with 10,203 hands and the quietest was 11:00 with 9,532.
The daily average was 237,687 hands.
Per open table, that is 109.7 hands at 01:00 and 108.4 at 11:00 The number of hands one table deals in an hour barely changed with the time of day.
Table type makes a big difference. The median hands per hour was 129 on speed tables and 77 on the others.
Whether the banker comes up more at certain hours is counted separately in baccarat time of day.

The closing tables are fixed and their times barely move. A short check before sitting down is enough.
When choosing baccarat site tables by time
Hiddenpick is a Windows program that keeps on its server the betting rules that pick owners do not make public, and runs them as they are on the PC of the person who received them through a referral code. It currently runs on Evolution live baccarat and blackjack (21) at Stake (stake.com). How it watches the lobby tables at once is described on the baccarat bot page.
We are recruiting national pickster representatives, and those selected receive benefits worth $12,000, a one-year pass. Apply: https://hiddenpick.my/pickster
