Every extra card adds time for the dealer to turn it and call the result. Speed tables run about 26 seconds a hand, but that is because their betting window is short, not because they deal fewer cards. The card count follows the same rule at every table type.
The card count is settled inside each hand. With 8 decks, a hand uses only 4 to 6 cards, so the cards already gone barely shift anything. In the clean shoes we collected, banker came out at 50.68%, almost exactly the theoretical figure.
