Three things first
At a live baccarat site, when the roadmap suddenly goes blank and the dealer starts gathering cards, the shoe is being changed. When that happens is written down in the rulebooks. We set those lines against the hand counts we actually recorded.
Cut card: a marker card near the back of the shuffled stack. When it comes out, the shoe's last hand is set.
Evolution's baccarat rulebook says the game uses eight standard 52-card decks and that play continues until the cut card is dealt (Evolution baccarat rulebook). After that, the cards are shuffled by a dealer or a shuffler.
Casino regulations spell out how many hands follow. New Zealand's Department of Internal Affairs rule 11.2 says that if the cut card comes out mid-round, the dealer finishes the round, announces "last hand" and deals one more (New Zealand baccarat rules). If it is the first card of a round, that round is the last.
So the number of hands in a shoe is set by where the cut card sits and how many cards each hand uses.

Eight decks are 416 cards. A hand ends with 4 cards, or with third cards it takes 5 or 6. Counting every case across the 416 cards, 4-card hands are 37.9%, 5-card hands 30.3% and 6-card hands 31.8%, an average of 4.94 cards per hand.
The shoes we recorded averaged 67 hands. That is 25,516 shoes on 96 tables, started between 9 and 24 September 2026 and recorded without breaks. 67 hands times 4.94 cards is about 331 cards.
416 minus 331 leaves 85 cards. By this count, about 1.6 decks never come out and go straight back into the next shuffle. The 4.94 figure is an average, so a shoe heavy in 6-card hands ends a few hands earlier and one heavy in 4-card hands runs a few hands longer.
The cards burned at the start of a shoe are inside those 85. Massachusetts rule 4(e) has the dealer draw the first card and discard that many more, with tens and face cards counting as ten (Massachusetts baccarat rules).
That averages 7.5 cards. If live studios burn the same way (an assumption), the cut card sits around 80 cards from the back (an estimate).
That is far from the regulators' minimum. Massachusetts requires at least 14 cards from the back, New Zealand at least 20. By this calculation, live tables cut the shoe much earlier than the regulatory minimum.

Hand counts bunch tightly. 66 to 68 hands is the largest group at 41.2%, and 63 to 71 covers 87.0%. 62 or fewer was 7.7%, 72 or more 5.4%.
The shortest shoe had 40 hands and the longest 90. The extremes may include mid-shoe changes or recording problems, so treat them as reference only.
Speed and standard tables give the same count: 66.9 hands on average over 18,655 speed shoes and 67.1 over 6,861 standard shoes. With the same 8 decks and cut card rule, a shoe has nearly the same number of hands whatever the table is called.

The same hand count does not mean the same time. The median gap between hands was 26 seconds on speed tables and 37 seconds on standard tables, and one shoe took 31.3 minutes and 45.0 minutes.
From the last hand of one shoe to the first hand of the next on the same table, the median was 1 minute 52 seconds on speed tables (13,159 changes) and 2 minutes 19 seconds on standard tables (4,985). One change in ten ran past 5 minutes 28 seconds on speed tables and 6 minutes 16 seconds on standard tables. How long changes cluster on certain tables is covered in baccarat shoe change time.
First, the rules window inside the game. It lists the deck count, an ending line such as "until the cut card is dealt", and the shuffle method. Evolution's rulebook says that where a shuffle table is available, two shoes are used in turn and a shuffler shuffles one while the dealer keeps the game going.
Second, the roadmap. The same rulebook says roads and shoe statistics are always cleared when a new shoe is introduced. A table whose roadmap is empty in the lobby has just changed its shoe.
Third, game speed. A shoe is 67 hands either way, so hands per hour depend on the table type. What the speed tables cut out is in speed baccarat site.
A.There is no fixed number. The shoe ends one hand after the hand in which the cut card comes out. Our 25,516 recorded shoes averaged 67 hands, and 87.0% had 63 to 71.
A.The rulebook says that after the cut card is dealt, a dealer or a shuffler shuffles the cards. Tables with a shuffle table swap in another shoe shuffled separately.
A.That table takes no bets until the first hand of the next shoe. In real records speed tables waited a median of 1 minute 52 seconds.
A.Per the rulebook, roads and shoe statistics are cleared and redrawn from the first hand of the new shoe.
Hiddenpick is a Windows program that keeps on its server the betting rules that pick owners do not make public, and runs them as they are on the PC of the person who received them through a referral code. It currently runs on Evolution live baccarat at Stake (stake.com). Newly supported: Pragmatic Play, AYX and Kaiyun. Large-sample numbers on hands and ratios within a shoe are collected on the how to win at baccarat page.
